About Us

Howdy - Bandit here. I’m the sourdough starter that keeps this operation honest. But don’t let the name fool you… the original outlaws are Jason and Erica…

Hello! We’re the husband-and-wife duo behind Wild Bandit Bakery - a pair of homestead teammates who believe that faith comes first, family comes next and the freedom to bake this good bread has a way of pulling both of those things just a little closer.

Erica is the baker, the heartbeat of the kitchen, and the one who somehow manages to turn flour, grit and patience into something that feels like home. Jason is the builder - the fixer, problem-solver, and the steady hard-working pair of hands that makes sure this dream stands on solid ground (literally).

When we’re not busy turning flour into a long-ferment gut-healthy loaf of goodness, we’re hard at work at home caring for our three beautiful children and our farm, Bold Rebalance Farm; a hearty homestead that’s been feeding hundreds of families in the Treasure Valley for years. On the farm, we produce kitchen staples like raw goat milk, raw cow milk, raw cream, chicken eggs, duck eggs, fruit, veggies, pork, beef and more.

Around here, we believe that food should heal, not harm. Bread should nourish the body and the soul. And honest hard work isn’t dead - it’s alive in every loaf we bake, in every early morning, and in every prayer whispered over our family, our farm and the flour that feeds your family. We hope you can feel that love in every bite.

Wild Bandit Bakery is part of something bigger that just the two of us. It’s a gathering place for folks who believe in slowing down, sitting together and savoring God’s many blessings. So, wether you’ve been with us since long before the bakery or you’re just wandering in for the first time - you’re welcome here.

Pull up a chair and warm your hands.
There is always room at our table.
